HELLO AUNTIE X TOKYO LAMINGTON'S LUCKY LUNAR NEW YEAR LAMINGTONS

Try a special trio of lucky Lunar New Year Lamingtons created by Hello Auntie and Tokyo Lamington (ex Black Star Pastry chef & N2 Extreme Gelato Founder).

Cuong Nguyen, head chef and owner of new-wave Vietnamese restaurant Hello Auntie has teamed up with the legends behind Tokyo Lamington to create three new lamingtons for Lunar New Year.

Championing the best of the Australian humble classic with a mix of Asian-fusion and Vietnamese flavours – the Lunar Lamingtons will be available individually for $7 each or $21 for a box of three from the Hello Auntie X Tokyo Lamington pop-up cart in Darling Square.

Paying homage to the Year of the Ox - Cuong’s creation is a savoury ‘Vietnamese Curry Lamington’ – featuring MB2 beef red curry katsu between two savoury lamington sponge pieces with cocoa butter and coated with fried shallots and roasted coconut flakes. Known for his innovative flavour combinations and blending the line between savoury and sweet food (à la the dessert hot dog “Banh Mi Kem”) – it was an obvious choice for Cuong to mix things up and go the savoury Lamington route.

Tokyo Lamington’s founders Eddie Stewart (former pastry chef at Black Star Pastry) and Min Chai (founder of N2 Extreme Gelato) have levelled up the humble lamington once again with the two sweet Lunar Lamingtons. The first being a ‘Pandan & Coconut Lamington’ – filled with pandan custard, dipped in pandan white chocolate sauce and coated with coconut flakes. The second a ‘Pineapple Tart Lamington’ - filled with pineapple jam, dipped in pineapple white chocolate sauce and coated with butter cookie crumbs.
